Somebody turned 2


Wow, I can't believe two years has flown by already since this little guy was born.  Eric is one lucky kid because the whole world parties on his birthday.  And we think he's special enough to desereve the whole world celebrating his special day with him. 

A little bit about our two year old guy.  Eric is a very caring person.  He genuinely feels bad for others when they are crying and will even cry when he's worried about characters in movies.  He also likes to make sure that others around him are taken care of.  One example of his caring spirit was when he and Brian made muffins for breakfast.  After the muffins were done, Brian said he'd take up one for daddy and one for Eric and Eric said, "and one for mommy?".  So Eric carried a muffin up to me all by himself so I could have a treat too.  Eric loves to give hugs and kisses.  The sweetest thing is when he asks for a "daddy hug" or a "mommy hug".    It has been so fun to see Eric's sense of humor develop more this year.  He has turned into the family jester.  If anything gets so much as a smile from us, he will do it over and over again just to make us laugh.   He loves music and will start dancing every time I turn my ipod on.  Eric loves all things that move: cars, trains, planes, trucks, buses, uh Bill key cars (Uncle Bill police cars), fire trucks, and helicopters (which he calls hello-i-copter).  

2 Year stats:  
Height: 35"  (which is 85% for his age)
Weight: 26 lbs.


Eric's cousins know him well.  This kid loves trucks!!!!

His birthday gift from us: a tow mater garage.

 Eric is lucky to have so many great older cousins who love to take care of him. 

And so many cousins his age to be playmates with.  Here's one of his little buddies.

I had been planning a Disney Cars birthday for this little guy, but a couple weeks before his birthday he started saying he wanted an airplane cake every time I asked.   Back to the drawing board and Brian helped me come up with this idea for a birthday cake.  It sure makes a mommy proud when every time he plays with this toy he says, "airplane cake.  Happy day airplane cake."  Definitely worth the switch in plans.

That was a fun party, and the cake did turn out absolutely perfect! Love our little Eric boy!

So how was fondant? Would you do it again? It scares me. Maybe one day! Naw probably not!

Kinz, It was super easy to work with. Really sweet but much easier to use than frosting. Expecially to make a smooth layer. I think I would use it again. And it is edible, just way to sweet for my taste so I scraped most of it off.
